Getting the height right
The standard guideline is to hang the bottom of each fixture about 30 to 36 inches above the countertop surface - low enough for useful task light, high enough not to block sightlines.
Getting the spacing right
Divide the island's length by the number of fixtures plus one, then space the centers at those intervals - usually around 24 to 30 inches between centers for a typical setup.
What's actually happening in the ceiling above
Kitchen islands often didn't have any ceiling box above them in the original construction. Getting pendants installed can mean running new wiring to new boxes positioned correctly above the island.
Multi-pendant wiring approaches
Separate individual boxes for each pendant, or a single canopy/backplate system where multiple cords drop from one central mount - check the fixture's weight rating against that single box.
